Low Carb Mini Cauliflower Crust Pizza

Have you ever wanted pizza, but not all the carbs that come along with it??  Well I have the perfect low carb recipe for you!  LOW CARB CAULIFLOWER CRUST PIZZA!  Yep you heard me right.  You will be amazed at how great this cauliflower crust pizza actually tastes. There are so many ways you can dress up your pizza.  I kept mine simple this go round

I really try to get my kids involved in the kitchen.  This was one that my daughter actually wanted to partake in!  Making these cauliflower crust pizza’s in a mini form makes it that much more fun!!

Once the head of cauliflower is cut up, you can go ahead a grate it using a cheese grater. I had to help finish, it can take some elbow grease to get it all grated! (or you can use a food processer)

When you are done, this is what it should look like.

After it came out of the microwave, we then mixed in the egg, parmesan cheese, mozzarella cheese, basil, oregano, garlic and onion powder and salt and pepper.

Once the crusts have been cut out, they are placed on a greased cookie sheet and baked in the oven at 425 degrees for about 10-12 min or until browned.

Now you can top with the pizza sauce, mozzarella cheese and the desired amount of pepperoni’s.  Place back in the oven for 3-4 min or until the cheese is melted.  Serve with fresh basil if desired.  Enjoy!!



Low Carb Mini Cauliflower Pizza's


  • 14 oz jar pizza sauce
  • 1 cup mozzarella cheese shredded
  • 25 oz package pepperoni
  • 2 tbsp fresh basil chopped

For the Cauliflower Crust

  • 1 head cauliflower chopped
  • 1 egg large
  • 1/3 cup mozzarella cheese shredded
  • 2 tbsp parmesan grated
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • salt & pepper to taste


  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat or just grease the baking sheet; set aside.

  2. To make the cauliflower crust, grate the cauliflower with a cheese grater or add cauliflower to a food processor and pulse until finely ground.  It should make about 2-3 cups depending on the size of your cauliflower.

  3. Transfer to a microwave-safe bowl. Cover with a paper towel and place into microwave for 4-5 minutes, or until softened; let cool.

  4. Using a clean dish towel or cheese cloth, drain cauliflower completely, removing as much water as possible.

  5. Transfer cauliflower to a large bowl. Stir in egg, mozzarella, Parmesan, basil, oregano, garlic powder and onion powder; season with salt and pepper, to taste.

  6. Spread out the mixture on a clean counter or a large cutting board.  Pat down until it is all even and about 1/2" thick.  Then take a glass cup or whatever you have and cut out the cauliflower pizza crusts with it.  Then take a spatula and transfer it to your baking sheet.  Keep doing this process until you have all your crusts cut out.  Spray lightly with nonstick spray and bake for 10-12 minutes, or until golden.

  7. Top each cauliflower round with pizza sauce, mozzarella and pepperoni. Place into oven and cook until the cheese has melted, about 3-4 minutes.

  8. Serve immediately, sprinkled with basil, if desired.
