Low Carb Blueberry Almond Flour Pancakes

Ok so I am a HUGE fan of almond flour.  These Low Carb Blueberry Almond Flour Pancakes are more than just breakfast, that are truly a TREAT!!  I never thought healthy could taste this good.  I’ll typically make a batch to last me throughout the week.  Sometimes I’ll make a double batch.  That way I have plenty for the week, and some to share :-).

They are super easy to make and reheat pretty well.  I’ll usually put blueberries in mine, but occasionally my daughter will ask me to leave them out of hers.

Low Carb Blueberry Almond Flour Pancakes

First you will add all the ingredients together in a medium bowl.   As for the sweetener, you can always tweak this and add the sweetener of your choice.  I’ve just found that Stevia works great for me.

Now stir it up really well.  It will be a little thick, but that’s how it’s suppose to be.

Now it’s time to get your griddle headed up.  One thing I like to do is to add a little bit of butter in the place where I’m going to put the batter.  This gives it a great color as well as adds a little rich butter flavor to your pancakes.

Spoon your batter onto your griddle and plop down those blueberries.  The amount you use depends on your personal preference.  It will take a few min for them to cook, then you can slowly flip them over.

Low Carb Blueberry Almond Flour Pancakes

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 12 pancakes

Ingredients

  • 2 cups almond flour
  • 4 eggs
  • 1/2 cup water
  • 1/4 cup coconut oil
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3-4 packets stevia or any sweetener you prefer
  • 1 pint blueberries

Instructions

  1. Mix all the ingredients together in a medium bowl.

  2. Spoon batter onto a hot griddle over medium heat.  (I found that 250 degrees works best and doesn't burn them).

  3. Flip them when the edges start to look dry.
