Low Carb Almond Flour Muffins

If you are looking for a Low Carb breakfast idea, you have come to the RIGHT place!  I don’t know what I did before I discovered almond flour.  It has changed my LIFE!  This recipe for Low Carb Almond Flour Muffins is super easy to make & tastes GREAT!!

Don’t want them for breakfast??  No problem, these are great any time of the day.  Let’s say you make some chili, these muffins would go great with it.  Reminds me kind of like cornbread!!

Here is one brand of almond flour that I use.  I get it from HEB.  Another great source is online.  I’ll post a link below in case you might be interested in ordering a bag or two!

Mix all the dry ingredients together.

Now all the wet ingredients are combined.

Wet & dry ingredients are well incorporated.  It will be a little thick.

Spoon the batter into your pan and get it as even as possible.  It doesn’t have to be pretty 🙂

Bake these for 14-16 in a 400 degree pre-heated oven.

So I should probably mention that I always make a DOUBLE batch of these (these pics are of a double batch) because….well one just won’t last around here 🙂  This is one of my favorite pans.  It’s from Pampered Chef.  I have so much of the stoneware.  I absolutely love cooking with it.  I’ll also list a link below in case you are interested and getting you one.

Now they are done!!  As you can see, my pan is very discolored.  That just means it is well seasoned!!  I use this pan often.

This is how I love to eat my muffins.  I buy frozen organic breakfast patties (chicken and apple) and cut all my muffins in half.  I place the patties in the middle and put them in a container in the fridge.  You can also wrap them up and stick them in the freezer and grab one when you want!

Ingredients

  • 1-1/2 cup Almond Flour
  • 1/4 tsp Salt
  • 1 tbsp Baking powder
  • 2 Eggs
  • 1/3 cup Sour Cream
  • 4 tbsp Butter melted
  • 1/2 tsp Garlic powder
  • 1/3 cup Shreded chedder cheese optional

Instructions

  1. Pre-heat the oven to 400 deg. Grease your pan, or use muffin tins. Whatever works for you.

  2. Combine all the dry ingredients together in a bowl and set aside.

  3. Combine all the wet ingredients in a separate bowl and mix until combined.

  4. Add the wet ingredients to the dry ingredients and mix until well incorporated.

  5. Now add the cheese if you decide to use it. Mix well.

  6. Spoon the batter into your well-greased pan. Get the amount as even as possible. 

  7. Bake at 400 deg for 14-16 min.
