Fiesta Mexican Stuffed Peppers

These Fiesta Mexican Stuffed Peppers are packed full of flavor and are super easy to make for those nights when you need something quick!  I have to be honest here, for years I hated bell peppers especially the green ones!  Not sure when that changed for me.  I don’t really like many dishes with bell peppers, but something about these stuffed peppers have got me hooked.

I started making these about a year ago and I tried different variations, but this one by far is my favorite!  The flavors just come together and make this dish so delicious.  I love Mexican food, but we all know most Mexican dishes are full of carbs.  These Fiesta Mexican Stuffed Peppers have all the flavor with hardly any carbs.

They are pretty simple to make.  I love to make these because most of the time we can eat on them for several days.  I live for leftovers.  It’s just like eating a taco without all the carbs.  And if you really want to cut most of the carbs out you can eliminate the rice, but I figured one cup of rice isn’t that bad.

You can always melt the cheese on top, but I prefer putting on all my toppings after they are done and on my plate!  There really are so many variations you can do to this recipe.  I have tried several, but this one by far is my favorite.

Fiesta Mexican Stuffed Peppers


Ingredients

  • 1 lb ground beef
  • 1 onion chopped
  • 2 tbls taco seasoning
  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup picante sauce
  • 4 oz frozen corn or canned
  • 15 oz black beans drained
  • 1 cup water

Toppings

  • sour cream
  • grated chedar cheese
  • cilantro

Instructions

  1. Pre-heat the oven to 350 deg.  

  2. Cut all the peppers in half and remove the seeds and ribs.  Place in a large pot.  Cover with water and boil for 10 minutes.

  3. While the peppers are boiling, go ahead and start browning the ground beef and onions.  Once the meat is completely browned add the taco seasoning and water. Simmer until ready.  

  4. Add the rice, corn, picante and black beans.  Mix until combined.

  5. Once the peppers are done, remover them from the water and place them in a pan.  Fill the peppers with the meat mixture.

  6. Bake at 350 for 20-25 min.

  7. Remove from oven and cool.  Top with your favorite toppings.  Enjoy!!
