These Easy Chocolate Covered Coconut Date Bars are such a simple, yet delicious treat.  They are perfect for when you are having a craving for something sweet.  For me that is pretty much everyday!  But you don’t have to feel to guilty for eating one of these.

Funny thing is that I never really ate dates until now.  I’d always see them at the store or see a recipe that called for dates, but never bought them up until a few months ago.

So one day we decided to buy a container of them.  We brought them home and ate a few here and there.  They were OK, but wouldn’t say I thought they were the best thing since sliced bread.  So the container sat there for a long while.  Guess they don’t go bad.  I decided one day that I needed to make something with them.  That’s where these Easy Chocolate Covered Coconut Date Bars come in!

I am always looking for quick and easy, and this recipe definitely fits the part.  Another great thing about them is that they freeze well so you can make a double batch and store them in the freezer.

The one kitchen gadget that you must have is a food processor.  HERE is the one that I use.  I absolutely love mine.  It has all the extra’s but it is so worth it.  I actually got mine on black Friday!   It was a great deal so I couldn’t pass it up.

So you just combine nuts and dates and pulse it until you have this consistency.  I didn’t have enough of one kind of nut, so I just combined the 3 that I had (pecans, raw almonds and walnuts).

Spread the date nut mixture into the bottom of a pan.  Press down firmly.  Next top with melted chocolate and toasted coconut!

Remember that you must toast the coconut.  It makes all the difference in the flavor.  So after those simple steps, just place in the freezer for about 10 min and then you are done!

Easy Chocolate Covered Coconut Date Bars

These bars are easy to make, but so delicious.  You will be surprised by how the flavors come together!

Ingredients

  • 9-11 dates pit taken out
  • 1 cup pecans or a mixture
  • 1 cup dark chocolate melted

Instructions

  1. Line an 8 x 8 pan with parchment paper.  Set aside.

  2. Soak pitted dates for about 5 minutes.  

  3. Toast the coconut over medium heat stirring constantly until it turns brown.  Be careful not to burn the coconut. 

  4. In a food processor combine pitted dates and nuts.  Process until they have broken down into very small pieces.  The mixture will be sticky.

  5. Transfer the mixture into your prepared pan.  Press down firmly until even.

  6. Pour melted chocolate over the top (I just microwaved mine).  Spread evenly.  Sprinkle with toasted coconut.  

  7. Place in the freezer for 10 min.  Remove the bars from the pan and cut into squares.
