Basic Cake Mix Recipes and Tips for Doctoring Them Up

Basic Cake Mix Recipes

Do you love baking cakes?  Do you love quick and easy?  Do you like trying new things?  Well you’ve come to the right place.  I have a few BASIC Cake recipes that I’d like to share with you that are super easy to make and I think that you will really like.  You should have all the ingredients right there in your panty and refrigerator.

Super simple…..who doesn’t want that?

I also want to give you some TIPS so that you can create a special cake that people will think you spent all day making.  First off, lets get started on the 3 basic cake recipes.

Basic Cake Recipes

1. Yellow Cake Mix

Basic Cake Mix Recipes and Tips for Doctoring them Up

Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tbsp baking powder
  • 1-/2 cups milk
  • 1/2 cup butter softened
  • 1-1/2 tsp vanilla
  • 2 eggs

Instructions

  1. Pre heat oven to 375 degrees.

  2. In a bowl combine flour, sugar, and baking powder. 

  3. Add milk, butter and vanilla to the dry ingredients.  Beat with an electric mixer on low speed till combined.  Beat on high speed for 2 minutes.  Add eggs and beat 2 more minutes. 

  4. Pour into 2 greased and floured 9 X 1-1/2-inch round baking pans.

  5. Bake in a 375 degree oven for 25 to 30 minutes or until a toothpick inserted near center comes out clean.

  6. Cool on wire racks for 10 minutes.  Remove from pans.  Cool thoroughly on racks.

 2. White Cake Mix

White Cake

Ingredients

  • 2-1/2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1-1/3 cups buttermilk
  • 1/2 cup butter
  • 1 tsp vanilla
  • 4 egg whites

Instructions

  1. Pre heat the oven to 350 degrees.

  2. In a bowl combine flour, sugar, baking powder, baking soda, and 1/8 teaspoon salt.

  3. Add buttermilk, butter, and vanilla.  Beat with an electric mixer on low speed for about 30 seconds, scraping bowl.  Beat on medium to high speed for 2 minutes, scraping bowl occasionally.  Add egg whites and beat for 2 min more, scraping bowl. 

  4. Pour into 2 greased and floured 9 X 1-1/2-inch round baking pans. 

  5. Bake in a 350 degree oven for 30 to 35 minutes or till a toothpick inserted near center comes out clean. 

  6. Cool on wire racks for 10 minutes.  Loosen sides.  Remove from pans.  Cool thoroughly on wire racks.

 3. One-Layer Chocolate Cake

One-Layer Chocolate Cake


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup milk
  • 1/4 cup butter softened
  • 1/2 tsp vanilla
  • 1 egg

Instructions

  1. Pre heat oven to 350 degrees.

  2. In a bowl combine flour, sugar, cocoa powder, baking powder, baking soda, and 1/4 teaspoon salt

  3. Add milk, butter, and vanilla.  Beat with an electric mixer on low speed till combined.  Beat on medium speed for 2 minutes.  Add egg and beat 2 minutes more.

  4. Pour into a greased an floured 9 x 1-1/2-inch round baking pan.

  5. Bake in a 350 degree oven for 30 to 35 minutes or till a toothpick inserted near the center comes out clean. 

  6. Cool on a wire rack for 10 minutes.  Remove from pan.  Cool thoroughly on a rack. 

Recipe Notes

This is only for a one-layer cake.  If you want a double like the others, you will have to double the ingredients.

With these 3 basic cake recipes I’ve listed above, you can create one of the following:

Add one of these to the dry cake mix:

  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg

Add one of these with the eggs:

  • 1/2 cup applesauce
  • 1 tablespoon instant coffee crystals (dissolved in a 2 tablespoons of water)
  • 1 tablespoon finely shredded orange peel
  • 1 teaspoon maple syrup
  • 1/2 teaspoon almond extract

Stir one of these into the cake batter:

  • 1 cup coconut
  • 1/2 cup finely chopped nuts
  • 1/2 cup miniature semisweet chocolate pieces
  • 1/2 cup well-drained, chopped maraschino cherries

You can also add a half cup of chocolate syrup to one-third of he white or yellow cake batter.  Pour the plain batter into the baking pans; pour chocolate batter on top of the plain batter.  Swirl gently with a spatula.

There are endless possibilities when it comes to doctoring up your basic cake mixes.   You can add in nuts and sprinkles to crushed up cookies!
