These Almond Flour Waffles are full of flavor even with having minimal ingredients. I promise that you won’t miss the carbs. Lately I’ve been obsessed with making recipes that have almond flour in them. You know these days a lot of people are trying to watch their carb intake. Emphasis on trying!!
Who knew foods with almond flour could taste so good?
After a while of experimenting with almond flour, I came to realize that you can use almond flour in place of all-purpose flour with many recipes which cuts out most of the carbs, but not the flavor. I am always thinking of new ideas to make a low carb breakfast. Well this morning I was thinking about waffles. (I have this awesome waffle maker with several attachments that I’ll tell you all about later). So…..I decided to make some Almond Flour Waffles this morning.
While these Almond Flour Waffles are really delicious, you have to have something to slather on top of them right? I had a bag of frozen blueberries in the freezer, so I decided to make some blueberry sauce. You can put just about anything you want on these waffles. You could make a mixed berry sauce or add whip cream and strawberries with nuts sprinkled on top. There are so many things you could use for toppings. It just depends on your preference. But if you love blueberries like I do, you will love this blueberry sauce!
These almond flour waffles are light and fluffy. I actually prefer them like this. I never did really like those hard, crunchy waffles. You know the ones you keep in your freezer and pop them in the toaster oven?? I have to admit that I do have those in my freezer as we speak, but I promise you these are SO much better.
I love my waffle maker! The waffles come out super easy with minimal mess. This waffle make actually has many different interchangeable plates for making quesadilla’s, panni’s, omelettes, and grilled cheese!

Almond Flour Waffles with Blueberry Sauce
These Almond Flour Waffles are absolutely delicious. The leftovers are just as yummy!
- 1 cup almond flour
- 1/2 tbsp baking powder
- 1/4 tsp salt
- 1 cup heavy cream or half and half
- 2 tbsp coconut oil melted
- 3 eggs
- 1-1/2 cup frozen blueberries
- 1/4 cup water
- 1/4 cup sugar or sweetener of your choice
- 2 tsp lemon juice
- 2 tsp cornstarch
- 1 dash cinnamon
Mix together the almond flour, baking powder and salt in a medium bowl.
In a seperate bowl, whisk the eggs. Add the cream and coconut oil. Mix until well combined.
Add the wet ingredients to the dry ingredients and mix until well combined.
Pour into a preheated waffle maker and cook until done.
In a small sauce pan, combine the frozen blueberries and water. Cook on medium for about 5-10 minutes stirring often.
Add the sugar, lemon juice and simmer for about 5 minutes. Now add the cornstarch and simmer till thickens.
Add a dash of cinnamon and mix.
Pour over your waffles and enjoy!
